2020 - Edible herbs and their use in the kitchens: The case of Kastamonu

Edible herbs and dishes made from these herbs are also very important as they reflect the culinary culture of a region within the scope of gastronomic tourism. Therefore, in this study, it is aimed to identify the weeds that grow in Kastamonu province and to find out how these herbs are used in the kitchen. For this purpose, qualitative research methods and interview techniques were used as research methods. The universe of research consists of those who consume edible weeds in Kastamonu province and sell them in markets. The sample consists of 16 volunteers who agreed to interview in this context. While determining these people, it was taken into consideration that they collect edible grass, consume them and be above 40 years of age. The interviews were held between 28.11.2019-28.12.2019.
As a result of the interviews, a total of 45 edible herbs grown in Kastamonu and used in the kitchen were identified. However, it was determined that only 15 of these herbs were offered for sale in the markets. It has been determined that some of the herbs are used as a meal on their own, are consumed as salads and their tea is consumed by making them for health benefits.
